Ratatouille Stew – The Paleo Way

I love Ratatouille! Fresh veggies cooked into a stew… Oh it is so yummy… It warms me up! Body and soul! When making this dish I used all organic produce and products, right down to the herbs. This stew is very good for winter weather and the ingredients are in season right now. I picked up all my produce from my local Co-Op Rawfully Organic. I hope you like the recipe. I have made Julia Child’s version… It took 18 hours a really, really long time, and I didn’t like it as much. My friend Meghan brought me a version of this recipe (I changed it a bit to make it Paleo) for the first time when I was home recovery from one of my surgeries. That is when my love for it began… I hope you enjoy it as much as I did! I usually have big bowl for dinner!

Ratatouille Stew – The Paleo Way

3 Tbsp. Coconut oil
1 Large Onion, diced
4 Cloves Garlic, minced
1-2 tsp. Herbs de Provence
1 tsp. Salt
1 Eggplant, diced
1 Zucchini, diced
1 Yellow Bell Pepper, diced
1 28oz can Organic Crushed Tomatoes
3 Cups Chicken or Veggie Broth
1 14oz can Organic Tomato Sauce
Large Handful of Basil Leaves, torn or cut in ribbons

Heat the coconut oil in a 3 1/2 – 6 quart size pot over med- hi heat. Add onion and garlic and cook until soft. Add the Herbs de Provence and 1 tsp of salt along with the eggplant, zucchini, and bell pepper. Cook the veggies, stirring a few times for about 5 minutes. Add diced tomatoes and their juices, 2 cups of broth and half the basil. Bring to a boil then reduce the heat and simmer for 20 minutes. Scoop a little less than half of the soup in to a blender or a bowl (if you have an immersion blender) and purée. Return purée to pot. Season with salt and pepper. To thin this out and make it more like a soup, add the extra cup of chicken broth and up to 14oz of tomato sauce. This part varies on your taste. I prefer mine to have a deeper tomato flavor. You may like it without any. It is good both ways. Serve with remaining basil sprinkled on top. And if you eat dairy a little Parmesan grated on each serving is yummy too!
